Day 4 of Twelve
Days of Christmas is a pair of flavoursome vinegars...
What you need –
1x Lemon
Handful of fresh
mint leaves – washed and slightly crushed
250ml white wine
vinegar
1x Orange
3 springs of Rosemary
plus one for decoration
250ml cider
vinegar
2x storage jars Kilner Clip Top Jar
A sieve
A funnel
2x cliptop
preserve bottle Kilner Clip Top Bottle
Time: 15 minutes
plus 1 week in the dark
For Lemon and Mint Vinegar
Pour 250ml of
white wine vinegar into a storage jar. Add 3 strips of lemon peel and a handful
of fresh mint leaves. Seal the jar and store in a cool, dark place for a week.
Tip the jar upside down each day.
After a week,
pour the contents of the jar through a sieve into a jug. Then using the funnel
decant into a bottle. Add another strip of lemon peel and some mint leaves for decoration.
For Orange and Rosemary Vinegar
Pour 250ml of
cider vinegar into a storage jar. Add 3 strips of orange peel and 3 sprigs of
rosemary. Seal the jar and store in a cool, dark place for a week. Tip the jar
upside down each day.
After a week,
pour the contents of the jar through a sieve into a jug. Then using the funnel
decant into a bottle. Add another strip of orange peel and a sprig of rosemary for decoration.
Both vinegars
can be used to dress salads, or to marinade chicken and fish. In particular,
the orange and rosemary infused vinegar has a really Christmassy smell to it so
would be perfect with any left overs you have?!.....
